Rosemary-Crusted Roasted Lamb
Serves 10

Ingredients

2 medium garlic cloves
1 (1- to 3-pound) bone-in lamb shoulder roast
teaspoon rosemary
Salt and pepper to taste

Preparation

Peel the garlic and cut into slivers. Make several slits in the roast. Insert the garlic in the slits. Sprinkle with rosemary. Season the outside of the roast liberally with salt and pepper. Place in a baking pan. Bake at 450 degrees for 10 minutes. Reduce the oven temperature to 350 degrees. Bake for 1 hour and 20 minutes longer, or 26 minutes per pound for medium-rare. Remove from the oven. Let rest for 20 minutes to allow the juices to settle. To serve, carve the roast across the grain into -inch slices.
