Taste of Life: Strawberry Pretzel Salad Serves 2 Ingredients 2 cups crushed pretzels cup (1 sticks) butter or margarine, melted 1 tablespoon sugar 8 ounces cream cheese, softened 8 ounces whipped topping 1 cup confectioners sugar 2 (3-ounce) packages strawberry gelatin 2 cups boiling water 2 (10-ounce) packages frozen strawberries Preparation Mix the pretzels, butter and sugar in a bowl. Press into a 9x13-inch glass baking dish. Bake at 400 degrees for eight minutes. Let stand until cool. Beat the cream cheese, whipped topping and confectioners sugar in a mixing bowl until smooth. Spread over the cooled crust. Dissolve the gelatin in the boiling water in a heat-proof bowl. Add the frozen strawberries and stir until broken apart. Spread over the cream cheese mixture. Chill, covered, for 3-12 hours before serving. Taste of Life: Rosemary-Crusted Roasted Lamb Rosemary-Crusted Roasted LambServes 10 Ingredients 2 medium garlic cloves1 (1- to 3-pound) bone-in lamb shoulder roast teaspoon rosemarySalt and pepper to taste Preparation Peel the garlic and cut into slivers. Make several slits in the roast. Insert the garlic in the slits. Sprinkle with rosemary. Season the outside of the roast liberally with salt and pepper. Place in a baking pan. Bake at 450 degrees for 10 minutes. Reduce the oven temperature to 350 degrees. Bake for 1 hour and 20 minutes longer, or 26 minutes per pound for medium-rare. Remove from the oven. Let rest for 20 minutes to allow the juices to settle. Taste of Life: Hummingbird Cake By Lisa Woodruff Ingredients 3 cups all-purpose flour2 cups sugar1 teaspoon baking soda1 teaspoon salt1 teaspoon cinnamon3 eggs, beaten1 cup vegetable oil1 teaspoons vanilla extract1 (8-ounce) can crushed pineapple (not drained)1 cups pecans, chopped, divided2 cups bananas, choppedCream cheese frosting Preparation Combine flour, sugar, baking soda, salt and cinnamon. Add eggs and oil, stirring until dry ingredients are moistened. Do not beat. Stir in vanilla, pineapple, 1 cup pecans and bananas. Pour into greased and floured 9-inch cake pans. Bake at 350 for 25-30 minutes. Cool. Cream Cheese Frosting cup butter, softened1 (8-ounce) package cream cheese, softened1 (16-ounce) box confectioners sugar2 teaspoons vanilla extract Preparation Combine all ingredients. Beat until smooth. Spread cream cheese frosting between layers and on sides and top. Top with cup pecans.
